Abstract
食肉の腐敗に大きく影響を及ぼすPseudomonas属菌に着目し,豚の解体処理工程ごとに枝肉のPseudomonas属菌の菌数を測定した.また,と体表皮,枝肉を流れ落ちる水滴を採取し,Pseudomonas属菌の菌数を測定した.枝肉上部では,前処理工程を経た後の全剝皮工程直前の段階でPseudomonas属菌の菌数が2.0×100 ~101cfu/cm2 であったが,枝肉洗浄機前には検出限界以下まで減少した.また,枝肉下部のPseudomonas属菌は部分剝皮直後には検出されなかったが,スキンナによる全剝皮工程以後から増加し,枝肉洗浄前で2.0×100 ~101cfu/cm2 に達した.と体表皮,枝肉より採取した水滴から,Pseudomonasが103 ~104cfu/ml 検出され,水を介しての汚染が示唆された.
