In order to select the best technology parameter for extracting tannic acid,the nuclear shell of Cerasus humilis was treated as the experimental material.L9(34) orthogonal experimental was designed to study the effects of liquid-solid ratio,solvent concentration,extracting time and the extracting temperature on the extraction of the tannic acid from the nuclear shell of Cerasus humilis with alcohol and acetone,respectively.The better extracting conditions of different extracting agents were compared by random experiment;the DPPH was used to study its scavenging effects on hydroxyl radical.The results showed that the best treatment combinations in extracting tannic acid from the nuclear shell of Cerasus humilis was 70% acetone,the extracting time was 5 hours,the extracting temperature was 60 ℃ and the liquid-solid ratio was 1 ∶ 12.The extraction yield was 0.180%.The scavenging activity on hydroxyl radical of tannic acid was 85% with the concentration of 0.1 mg / mL and the IC 50 was 0.023 mg / mL.Tannic acid from the nuclear shell of Cerasus humilis has high anti-oxidative activity.
