Abstract
[Objective]To understand the hygienic status of tableware in catering trade.[Methods]Surveillance data of tableware disinfection in catering trade in Zhoucun district from 2005 to 2007 were analyzed.[Results]21 529 tableware samples collected from 2 690 units(times) were tested from 2005 to 2007,12 366 of them were up to standard,accounting for 57.43%.The qualified rate was 56.76%,57.34% and 58.02% respectively from 2005-2007(P0.05).The annual average qualified rate was 40.21% and 64.37% in dining halls and food processing rooms(P0.01) it was 63.12%,45.09%,53.54% and 67.68% respectively from the first to the fourth quarter(P0.01),as well as 91.05%,50.36% and 22.87% respectively in large,medium and small catering units(P0.01).The qualified rate of tableware and drink-ware was 58.96% and 46.62%(P0.01).[Conclusion]The qualified rate of tableware in catering trade in Zhoucun district was lower,there were some problems in tableware disinfection in small catering units.
