Analysis on nutritional ingredients in Hulless barley from different producing areas

Abstract
In order to understand the nutritional ingredients in Hulless barley from different producing areas,nutrition ingredients,including moisture,ash,minerals,proteins,amino acids,fat,fatty acids,monosaccharide and starch,were analyzed in 13 kinds of Tibetan Hulless barley from different producing areas. Results showed that the mass ratio of moisture in raw materials of Hulless barley was10. 27%,and the mass ratio of ash was 1. 92%,protein's mass ratio is 9. 80%,the mass ratio of fat is 1. 70% and the mass ratio of starch is between 60. 00% and75. 00%. Hulless barley is rich in linoleic acid,and owns higher cetylic acid and oleinic acid,with good nutritional value; Meanwhile,Hulless barley contains abundant essential amino acids,such as Thr,Val,Met,Ile,Leu,Phe and Lys.
