Abstract
Ice recrystallization inhibition by ice structuring proteins (ISPs) from cold-acclimated winter wheat extract (AWWE) or propylene glycol monostearate (PGMS) was evaluated in ice cream. The addition of 0.0025% total protein from AWWE or 0.3% PGMS both significantly reduced ice crystal sizes in ice cream before and after heat shock, although the effect of PGMS was more dramatic. PGMS showed limited emulsifier properties by promoting smaller fat globule size distributions and enhanced partial coalescence in the mix and ice cream, respectively, but at a much reduced rate compared to conventional ice cream emulsifiers. PGMS was also effective at inhibiting recrystallization in sucrose solutions frozen under dynamic conditions, but lacked any effect in quiescently-frozen solutions. There was strong evidence to suggest that PGMS directly interacts with ice crystals and interferes with normal surface propagation. Shear during freezing may be required for its distribution around the ice and sufficient surface coverage.
