Abstract

core-shell particles (2.9 mm diameter) of maize bran arabinoxylans (MBAX) with insulin in the core, and maize wastewater arabinoxylans (MWAX) with Bifidobacterium in the shell. Scanning electron microscopy revealed a porous (core) and a smooth (shell) microstructure. Confocal laser scanning microscopy confirmed the particles core-shell structure and the viability of the probiotic entrapped. Under simulated gastrointestinal conditions these particles were not degraded in the stomach and small intestine, but released 76% of the carried insulin in colon. Insulin and Bifidobacterium encapsulation by electrospray could be feasible and adequate to produce arabinoxylan particles containing both insulin and probiotics. This cover article
