Alors que l’on peut s’initier à une vaste panoplie de cultures alimentaires internationales au sein de la plupart des villes nord-américaines, qu’en est-il de la découverte de cultures alimentaires autochtones ? Existe-il des « restaurants autochtones » ? Au Canada, de telles initiatives fleurissent lentement, à ce point qu’il est dorénavant possible de « manger autochtone ». L’offre reste toutefois restreinte et, à l’exception de Toronto et de Vancouver, il est plutôt rare de trouver plus d’un restaurant de ce type dans une même ville. À quoi s’attendre lorsqu’on mange dans l’un de ces restaurants ? Comment la diversité culturelle des peuples autochtones est-elle mise en scène ? Retrouve-t-on des plats communs (entre quoi et quoi ?) ? Un itinéraire gourmand entre Montréal et Vancouver a permis de visiter treize restaurants et d’en analyser le menu, le décor et l’ambiance. L’article porte ainsi sur la mise en scène de l’autochtonie dans ces lieux généralement situés en centre-ville et qui s’adressent à un public varié, autant autochtone qu’allochtone. Une discussion sur les implications du terme « autochtone », en tant que désignant une entité sociale globale rassemblant une multitude de cultures distinctes, amène à s’interroger sur les enjeux liés au fait de s’y identifier. Les défis d’une telle restauration sont aussi discutés afin de déceler, au sein des restaurants concernés, l’émergence d’une forme de cuisine autochtone globalisée mobilisant des symboles et des référents culturels panindiens.
