Abstract

Objetivo: Avaliar a quantidade de sobras aproveitáveis e não aproveitáveis produzidas em uma Unidade de Alimentação e Nutrição e seu impacto. Metodologia: Foram pesadas as sobras aproveitáveis e não aproveitáveis das preparações do almoço, durante 5 dias. Foi feita a média da quantidade de sobras, posteriormente, esse valor foi dividido pela quantidade da porção estimada para cada preparação, com base nas fichas técnicas da unidade. Resultados: Das preparações fixas, o arroz branco apresentou maior quantidade de perda, correspondendo a 72 refeições. Das guarnições, o cará teve desperdício de 2,6 Kg, equivalente a 17 refeições. Em relação às saladas, a de abobrinha apresentou perda equivalente a 40 refeições. Dentre as proteínas, o bife bovino foi a preparação mais cara e com maior perda, correspondendo a 14 refeições. Conclusão: É perceptível que a unidade apresenta um desperdício de alimentos que poderiam estar alimentando dezenas de comensais, causando prejuízos financeiros, sociais e políticos. Este desperdício pode ser evitado com medidas simples, como ajuste da quantidade distribuída no balcão.
