Abstract
La trichinellose est une zoonose parasitaire transmise par la consommation de viande d'animaux infectés par les nématodes Trichinella.En Amérique du Nord, la trichinellose humaine est rare et se transmet le plus souvent par la consommation de viande de gibier sauvage.En juillet 2022, un patient hospitalisé avec une trichinellose suspectée a été signalé au ministère de la santé du Minnesota.Une semaine avant l'apparition des symptômes, le patient et huit autres personnes ont partagé un repas comprenant de la viande d'ours qui avait été congelée pendant 45 jours avant d'être grillée et servie saignante avec des légumes qui avaient été cuits avec la viande.L'enquête a permis de recenser six cas de trichinellose, dont deux chez des personnes n'ayant consommé que les légumes.Des larves mobiles de Trichinella ont été trouvées dans la viande d'ours restante qui avait été congelée pendant plus de 15 semaines.Des tests moléculaires ont permis de déceler les larves de la viande d'ours comme étant des Trichinella nativa, une espèce résistante à la congélation.Les personnes qui consomment de la viande de gibier sauvage doivent savoir qu'une cuisson adéquate est le seul moyen fiable de tuer les parasites Trichinella et que la viande infectée peut contaminer d'autres aliments.
