Kimchi merupakan makanan fungsional yang berbahan baku sayuran yang dapat dibuat secara fermentasi spontan. Kimchi adalah makanan fermentasi tradisional dan makanan etnis yang representatif di Korea dan telah dilaporkan sebagai makanan sehat. Bahan baku kimchi umumnya adalah sawi putih, namun saat ini bahan baku kimchi dapat berasal dari berbagai sayuran, salah satunya pakcoy. Diantara sawi hijau, sawi putih dan sawi pakcoy yang mengandung karotenoid tertinggi adalah sawi pakcoy (Brassica rapa L.), sedangkan kandungan karotenoid terendah adalah sawi Putih (Brassica Juncea L.). Penelitian ini bertujuan untuk mengetahui aktivitas Bakteri Asam Laktat (BAL) dan antioksidan kimchi pakcoy akibat konsentrasi garam dan lama fermentasi. Desain eksperimental dengan dua faktor, faktor kesatu (S) yaitu konsentrasi garam (2%, 4% dan 6%) dan yang kedua (F) yaitu lama waktu fermentasi (2 hari, 4 hari dan 6 hari) dengan tiga kali pengulangan. Data disajikan dalam bentuk diagram, kemudian hasilnya dibahas secara deskriptif. Kimchi dibuat dengan mencampurkan bahan penunjang dan garam yang dibalurkan pada pakcoy, disimpan di dalam toples kaca dan kemudian difermentasi. Pengamatan dilakukan dengan uji aktivitas BAL menggunakan metode Total Plate Count (TPC) dan aktivitas antioksidan menggunakan metode Diphenyl picrylhydrazin (DPPH). Hasil penelitian menunjukkan bahwa Konsentrasi garam dan lama waktu fermentasi berpengaruh terhadap total BAL dan aktivitas antioksidan. Konsentrasi garam yang meningkat mengakibatkan total BAL menurun, sedangkan lama waktu fermentasi yang meningkat menyebabkan total BAL meningkat. Konsentrasi garam dan lama waktu fermentasi yang meningkat mengakibatkan aktivitas antioksidan menurun. Aktivitas antioksidan tertinggi adalah 86,35%, sedangkan kandungan BAL yang tertinggi adalah 4,4x1011CFU/mL.
