O presente artigo traz uma análise sobre o ensino de engenharia e os desafios da indústria fabricante de máquinas e equipamentos para pós-colheita de grãos. Nos primórdios dos cursos de engenharia no século XIX, a ênfase era colocada na combinação entre teoria e prática; no entanto, ao longo do tempo, houve uma inclinação em direção ao ensino puramente teórico. Apesar disso, as demandas da sociedade e do mercado de trabalho para engenheiros demandam uma formação integral que una teoria e prática. Paralelamente, a automação e controle de processos na pós-colheita de grãos emergem como uma excelente oportunidade para integrar a prática ao ensino de engenharia, promovendo tanto a motivação dos estudantes quanto o desenvolvimento de soluções inovadoras para a indústria. Este artigo propõe uma revisão bibliográfica sobre o ensino na engenharia, destacando treze objetivos de aprendizagem em laboratório. Em seguida, são abordados os processos envolvidos na pós-colheita de grãos, seguido pela apresentação do conceito de um laboratório interdisciplinar dedicado à automação e pós-colheita de grãos. Por fim, apresenta-se o estudo de caso de um projeto de extensão de uma máquina de limpeza, onde percebe-se a importância da aproximação entre universidade e indústria para a resolução de problemas reais através da pesquisa e da extensão.
