В работе представлены сведения о количественных и качественных показателях мясной продуктивности бычковгалловейской породы разных популяций крупного рогатого скота. Для изучения мясной продуктивности животных сформированы три группы животных по принципу аналогов с учетом селекции породы. В I группу вошли бычки галловейской породы местной селекции, во II - немецкой селекции и в III животные галловейской породы канадской селекции. В период опыта животные находились в одинаковых условиях кормления и содержания.Целью работы являлось изучение мясной продуктивности импортного галловейского скота в сравнении с галловейским скотом местной популяций вусловиях Забайкальского края. Сравнительная оценка количественных показателей по мясной продуктивности свидетельствует о том, что у бычков III группы масса охлажденной туши и внутреннего жира выше, чем у бычков I и II группы на 30,0 кг и 12,7 кг (14,6 и 5,7%); на 0,8 кг и 0,2 кг (10,9 и 2,5%) соответственно. Аналогичная тенденция отмечена и по убойному выходу. По данным химического состава мякоти туш на содержание влаги, протеина, жира и золы оказалось, что большее содержание протеина и жира было в пробах мяса бычков III группы. Из-за высокого содержание жира у них и выше калорийность мяса. По данному показателю они превышают сверстников I и II группы на 687,2 и 257,6 кДж.Таким образом, полученные данные свидетельствуют, что животные канадской селекции имели лучшие количественные и качественные показатели мясной продуктивности, чем животные местной и немецкой селекции. The paper presents information on the quantitative and qualitative indicators of the meat productivity of bull calves of the Galloway breed of different cattle. To study their meat productivity, three groups of animals were composed on the principle of analogs, taking into account breed selection. The first group included bull calves of Galloway breed of local breeding, the second included Galloway breed of German selection, and the third included Galloway breed of Canadian selection. During the experiment, the animals were in the same conditions of feeding and housing. The aim of the work was to study the meat productivity of imported Galloway cattle in comparison with Galloway cattle of the local populations in the conditions of the Trans-Baikal Territory. A comparative assessment of quantitative indicators of meat productivity suggests that the mass of chilled carcass and internal fat of bull calves in group III is higher than that of bulls in group I and II by 30.0 kg and 12.7 kg (14.6% and 5.7 %); by 0.8 kg and 0.2 kg (10.9% and 2.5%) respectively. A similar trend was noted for the slaughter yield. According to the chemical composition of the meat content for moisture, protein, fat and ash, it turned out that the greater content of protein and fat was in samples of meat from bulls of group III. Due to the high fat content the meat has higher calorie value. This group exceeds the group I and II by 687.2 and 257.6 kJ. Thus, the data obtained indicate that animals of Canadian selection had better quantitative and qualitative indicators of meat productivity than animals of local and German selection.
