Abstract

This article aims to review how to use cutting-edge synchrotron-based and globar-based molecular spectroscopic techniques to reveal synergistic impact and interactive association between molecular structure and nutrient properties and supply in enzymatic and thermally treated oat endosperm tissue and whole oat grain. The review includes (1) advanced molecular spectroscopic technique sourced by synchrotron radiation and its application; (2) advanced technique globar-sourced molecular spectroscopy and its application; and (3) research progress on cereal oat grain. The emphasis of this review is on the principle, theory, and current applications of molecular spectroscopy. The information described in this article gives better insight into the utilization of cutting-edge molecular spectroscopy to reveal molecular structure features that are associated with nutrition values. Future oat research directions are also provided, including advancing oat molecular structure and nutrition interaction knowledge by increasing and enhancing the basic understanding of the nutritional relevance of biopolymers’ intrinsic structure and chemistry on both cellular and molecular bases.
