Tilaviinien vetovoimatekijät Suomen ravintoloissa

Abstract
Tämän opinnäytetyön toimeksiantaja on Suomen Viiniyrittäjät ry. Yhdistyksen tarkoitus on edistää suomalaisten viinitilojen toimintaedellytyksiä ravintolamarkkinoilla. Suurin osa suomalaisista viinitilallisista ovat jäseninä yhdistyksessä. Opinnäytetyö tutkii, millaiset tekijät vaikuttavat tilaviinien päätymiseen kotimaisten ravintoloiden juomalistoille. Työssä selvitetään kuluvan vuoden parhaaksi äänestetyissä ravintoloissa työskentelevien mielipiteitä ja näkemyksiä tilaviineistä. Työn pääongelmana on selvittää, millaisia vetovoimatekijöitä tilaviineihin kohdistuu Suomen ravintoloissa. Lisäksi alaongelmina tutkitaan miten tilaviinejä voisi kehittää ravintoloiden tarpeita varten ja millainen on tilaviinien tulevaisuuden potentiaali ravintoloissa. Tutkimuksen aineistonkeruu suoritettiin sähköisenä kyselynä ja kohderyhmäksi valittiin vuoden 2024 Suomen Top 50 – listaukseen päätyneet ravintolayritykset. Tutkimus toteutettiin kvalitatiivisella kyselylomakkeella, joka sisälsi reilusti avoimia vastauskenttiä monipuolisten mielipiteiden ja näkemyksien saavuttamiseksi. Vastaukset teemoiteltiin ja analyysissä keskityttiin ilmenneisiin teemoihin. Tulokset osoittivat ravintoloiden edustajien pitävän tilaviinien tulevaisuuden potentiaalia ravintoloissa lähtökohtaisesti hyvänä. Tuloksista ilmenneille tilaviinien vetovoimatekijöille esitettiin myös useita kehityskohteita niiden käyttöönoton potentiaalin laajentamiseksi. Kotimaisilla tilaviineillä on tulosten mukaan hyvä mahdollisuus säilyttää ja kasvattaa markkina-asemaansa Suomen ravintoloissa, vaikka kehitysehdotuksia ilmenikin runsaasti.
