Le végétalisme est un régime alimentaire excluant tous les aliments issus du règne animal : la viande, la volaille, le poisson, les crustacés, les mollusques, les œufs, les produits de la ruche, le lait et ses produits dérivés. Une alimentation végétalienne équilibrée, bien menée et supplémentée en vitamine B12 est possible à tous les âges de la vie, sans risque pour la santé. Cependant, en cas de manque de connaissances sur les besoins nutritionnels cela peut causer des pathologies carentielles sévères. Il faut notamment être vigilant sur les risques de carences liés au calcium, au fer, au zinc et à la vitamine B12. Les besoins nutritionnels varient tout au long de la vie et il est primordial d’adapter les apports nutritionnels à chaque tranche d’âge. Le pharmacien d’officine joue un rôle essentiel dans l’accompagnement des patients végétaliens, notamment pour aider à cette adaptation alimentaire. Il participe à la prise en charge des patients de tous les âges, il prodigue des conseils associés aux prescriptions médicamenteuses, notamment lors de supplémentations. Son rôle est primordial lors de demandes spontanées de conseils sur les compléments alimentaires. L’objectif de cette thèse est de fournir aux pharmaciens d’officine un document de synthèse et d’analyse afin de leur permettre d’accompagner les patients végétaliens. Ce document réunit pour cela les connaissances actuelles et notions indispensables concernant les recommandations nutritionnelles générales, les sources végétales des macro et micronutriments et les nutriments à risque, à toutes les périodes de la vie. Il expose également les intérêts, risques et limites des supplémentations disponibles en officine.
