La production du fromage cheddar au Québec : de l'artisanat à l'industrie, 1865-1990

Abstract
Cette étude sur la production du cheddar au Québec de 1865 à 1990 vise essentiellement deux objectifs. Dans un premier temps, elle tente d'identifier et d'analyser les principaux facteurs (historiques, politiques, socioéconomiques et technologiques) qui sont responsables de la disparition de 1 530 petites fabriques de cheddar au Québec. Dans un deuxième temps, elle cherche à démontrer qu'en contrepartie certains facteurs culturels ont contribué au maintien de cette activité de production et ont permis à la Fromagerie Perron (Lac-Saint-Jean) ainsi qu'à d'autres petites entreprises fromager es de subsister et même de prendre une certaine expansion. S'inscrivant dans le champ du patrimoine immatériel, cette étude ethno historique a été réalisée à partir d'une recherche documentaire et d'enquêtes orales menées auprès d'authentiques porteurs de traditions (fromagers). Faisant la synthèse de cette abondante collecte de données, cette thèse comporte deux grands volets thématiques. Dans le premier volet, intitulé « Une histoire, un lieu », on y traite de l'évolution de l'industrie fromagère au Québec, puis au Saguenay-Lac-Saint-Jean. Par la suite on y présente un bref historique de la Fromagerie Perron qui, à travers ses cent ans d'existence, témoigne de l'évolution de cette industrie. S'attardant ensuite au lieu où s'effectuait jadis la fabrication du cheddar, on y découvre cette ancienne fromagerie qui, par ses composantes architecturales et son aménagement intérieur, s'avère un modèle très représentatif de la fromagerie artisanale de la fin du siècle dernier. Dans le second volet, ayant pour thème « Une tradition », on y parle de la transmission du savoir-faire, puis de la pratique du métier de fromager qui se manifeste à travers la méthode de fabrication. Pour terminer on s'intéresse au procédé de fabrication industriel, qui constitue le prolongement de cette pratique traditionnelle actualisée.
