Menukorttien kielen, ulkoasun ja rakenteen muutos sekä menuiden gastronominen kehittyminen Helsingissä vuosina 1860–2000

Abstract
Tämä opinnäytetyö keskittyy menukortteihin, niiden ulkoasuun, kieleen ja gastronomiaan. Menukortti on oleellinen osa ravintolahistoriaa ja pöydän kattausta ja siksi se on erittäin tärkeä tutkimuskohde. Nykyisessä muodossa menuitä on käytetty jo 1800- luvulta asti ja niitä hyödynnetään pääasiassa illallisjuhlissa ruokalajien tarjoilujärjestyksen tiedottamisessa. \n \nMenututkimuksen valmiina aineistona on käytetty Hotelli- ja ravintolamuseon menuarkistoa, josta on otettu harkinnan varaisia näytteitä kolmen vuosikymmenen välein alkaen 1860-luvulta ja päättyen 2000-luvulle. Tutkimus tehtiin maaliskuussa 2014 Hotelli- ja ravintolamuseon tietopalvelun tiloissa ja se koostu 42 menustä, joista tarkastellaan seuraavia kohtia: menun perustiedot, asettelu ja taitto, kieli ja kirjoitusasu, kuvitus ja värit, ruokalajien lukumäärä ja käytetyt pääraaka-aineet sekä tarkentavat tiedot esimerkiksi menun lahjoittamisesta tai ostamisesta museon kokoelmaan. \n \nTutkimuksen tuloksia on vertailtu keskenään ja niistä on etsitty yhteneväisyyksiä ja eroavuuksia. Menuitä on luokiteltu ja niiden pohjalta on pyritty tekemään yleistyksiä ja vastaamaan tutkimusongelmaan: mitä muutoksia menuissä on tapahtunut vuosina 1860–2000? \n \nTutkimuksessa oli mahdollista seurata ruokalajien määrän laskua aina 2000-luvulle asti. Alkoholinkieltolain ajaksi 1920-luvulla juomalistat poistuivat menuistä. Menuiden kieli on ollut aikaisemmin pääosin ranskan kielellä, mutta etnisten ravintoloiden vallatessa alaa 1980-luvulla suomenkieli on noussut pääkieleksi. Ruotsin kulttuurilla puolestaan on ollut yllättävän vähän vaikutusta menuissä. \n \nTutkimus tuo lisää tietoa ravintolahistoriasta ja vahvistaa jo tunnettuja muutoksia. Jatkotutkimuksia suositellaan tehtäväksi menun kielellisestä kehittymisestä sekä menuissä käytettyjen kuvien merkityksestä.
