Analisis Kandungan Total Coliform Pada Minuman Susu Kedelai dan Higiene Sanitasi Usaha Kecil Menengah Susu Kedelai di Kota Padang

Abstract
Pengolahan susu kedelai yang tidak dilakukan secara higiene dapat meningkatkan \nkontaminasi produk susu kedelai oleh bakteri patogen. Penelitian ini bertujuan untuk \nmenganalisis kandungan Total Coliform pada susu kedelai dan higiene sanitasi usaha \nkecil menengah susu kedelai di Kota Padang. Penelitian dilakukan pada lima tempat \npengolahan susu kedelai dimana dilakukan tiga frekuensi pengambilan sampel. Total \nColiform dihitung menggunakan metode Most Probable Number (MPN) dan \ndibandingkan dengan SNI 01-3830-1995 tentang syarat mutu susu kedelai. Analisis \nhigiene sanitasi usaha susu kedelai menggunakan pertanyaan yang mengacu pada \nKepmenkes nomor 942 tahun 2003, dan dilakukan wawancara dan observasi kepada \npengolah susu kedelai. Hasil penelitian didapatkan kandungan Total Coliform yaitu \n1,54 MPN/ml;3,60 MPN/ml; 2,74 MPN/ml; 41,11 MPN/ml dan 4,2 MPN/ ml. Hasil ini \nmenunjukkan empat dari lima usaha susu kedelai memenuhi syarat mutu yaitu 20 mpn/ \nml. Usaha susu kedelai yang tidak memenuhi syarat mutu masih menerapkan dua dari \nempat aspek higiene sanitasi dengan kategori baik.
