Ravintolapäivä ja pop up -ravintolat ilmiönä ja kokemuksena

Abstract
Opinnäytetyö käsittelee Ravintolapäivää ja Ravintolapäivänä perustettavia pop up -ravintoloita. Suomessa alkunsa saanut neljännesvuosittain järjestettävä ruokatapahtuma on saavuttanut lyhyessä ajassa kansainvälisestikin suuren suosion, mutta tutkimuksia aiheesta on tehty vähän, tai ne vain sivuavat aihetta.\n\nIlmiöstä haluttiin saada mahdollisimman laaja kokonaiskuva, joten käytettyjä tutkimusmenetelmiä on useita: havainnointi, teemahaastattelut sekä tutkimuskysely pop up -ravintoloiden perustajille. Lisäksi työhön sisältyy toiminnallinen osuus, jossa avattiin oma pop up -ravintola.\n\nTapahtumaa havainnoitiin Jyväskylässä pop up -ravintoloita kiertäen ja järjestäjiä haastatellen. Teemahaastatteluissa haettiin erilaisia näkökulmia Ravintolapäivän teemoihin kytkeytyviltä henkilöiltä. Tutkimuskysely suoritettiin Webropol-ohjelmalla. Kyselyitä lähetettiin yhteensä noin tuhannelle järjestäjälle. Vastauksia saatiin 284, joista 113 Suomesta ja 171 ulkomailta.\n\nTutkimusmenetelmillä saatiin menetelmästä riippuen monenlaisia tuloksia. Havainnointi näytti konkreettisesti Ravintolapäivän toimintamalleja ja tarjontaa. Oman pop up -ravintolan perustaminen opetti pienimuotoisenkin yrittämisen työläyttä ja etukäteissuunnittelun merkityksellisyyttä. Kyselylomakkeista tärkeimpänä yksittäisenä asiana nousi esiin järjestäjien innokkuus tapahtumaa kohtaan. Hienoisia eroja havaittiin Suomen ja ulkomaiden välillä. Teemahaastatteluista kävi ilmi selkeä polarisoituminen viiteryhmästä riippuen.
