RÉSUMÉ: Avec l'amélioration du niveau de qualité de la vie, il y a une demande croissante de formulations d’ingrédients alimentaires personnalisés et de conception d’aliments. La situation du vieillissement de la population a également accru les besoins en matière de composition des repas et de nutrition adaptées. De plus, avec la double augmentation attendue du nombre de personnes âgées de 65 ans ou plus au cours des trois prochaines décennies, le régime alimentaire en cas de dysphagie a attiré beaucoup d'attention. Cependant, l'apparence peu attrayante de ce régime (généralement à l'état écrasé ou en purée) entraîne une perte d'appétit, qui est directement liée à la malnutrition et à la perte de poids du patient souffrant de troubles de la déglutition. La fabrication additive (FA), également connue sous le nom d'impression 3D, est devenue une technologie émergente dans les applications alimentaires ces dernières années. Elle permet la fabrication d'aliments avec relativement moins de perte de matière, une forme plus complexe et un contrôle précis des ingrédients, montrant un grand potentiel pour complémenter la cuisine familiale et en clinique. Les protéines et les polysaccharides sont deux principaux types de macromolécules dans le système alimentaire. Elles jouent un rôle vital dans des fonctions nutritionnelles, structurelles et texturales complémentaires, faisant le système à base de protéines et de polysaccharides un bon candidat modèle pour l'impression 3D alimentaire. Cette thèse vise à développer des formulations d'encres à base de gels mixtes protéine/polysaccharide pour la fabrication additive en vue d’applications alimentaires. Tout d'abord, une encre alimentaire aqueuse à base de protéine/polysaccharide utilisant de la gélatine B (GB) et de la gomme de xanthane (XG) a été développée pour l'impression à écriture directe d’encre « direct ink writing » (DIW). GB et XG ont été choisis comme matériau d'encre, car ce sont des ingrédients alimentaires peu coûteux et couramment consommés. L'encre en gel de GB/XG présente des propriétés appropriées pendant et après le processus d'impression 3D, ce qui confère à un objet imprimé en 3D à 40 couches un motif clair à température ambiante. L'ajout d'ions calcium (Ca2+), un micronutriment nécessaire au quotidien, améliore les propriétés rhéologiques de l'encre, donc une plus grande fidélité de forme. De plus, il a également été constaté que les propriétés texturales peuvent être ajustées par le pourcentage de remplissage des échantillons imprimés. ABSTRACT: With the improvement of living standards, there is a growing demand for personalized ingredients and design in food. The serious aging situation has further expanded peoples’ requirements for tailored meal compositions and nutrition. Moreover, dysphagia diet has attracted more attention due to the expected double increase in the number of elderly people above 65 and older in the next three decades. However, the unattractive appearance of common dysphagia-oriented diet (usually in mashed or pureed state) causes a loss of appetite, which is directly related to malnutrition and weight loss for the swallowing-impaired patient. Additive manufacturing (AM), also known as 3D printing, is becoming an emerging technology in food application in recent years. It enables food fabrication with less material loss, more flexible shapes and precise content control, showing great potential to enter the home kitchen and clinics. Proteins and polysaccharides are two main types of macromolecules in food systems. They play a vital role in complementary nutritional, structural and textural functions, making the system based on protein and polysaccharide a good model candidate for 3D food printing. This thesis aims to develop ink formulations based on protein/polysaccharide mixed gels for additive manufacturing towards food application. Firstly, an aqueous protein/polysaccharide food ink using gelatin B (GB) and xanthan gum (XG) was developed for direct-ink writing (DIW) printing. GB and XG were chosen as ink materials because they are low cost and commonly consumed food ingredients. The GB/XG mixed gel ink shows suitable properties during and after the 3D printing process, which endows a 40-layer 3D printed object with clear pattern at room temperature. The addition of calcium ions (Ca2+), a daily required micronutrient, improves the rheological properties of the ink, giving rise to a higher shape fidelity. Furthermore, it was also found that the texture profile can be tuned by the infill percentage of the printed samples.
