Analyse technico-économique de la valorisation des coproduits de crabe et de homard en Gaspésie : un outil pour les transformateurs

Abstract
RÉSUMÉ : La transformation du crabe et du homard au Québec génère annuellement une quantité importante de résidus, appelés coproduits. Ce mémoire s’intéresse au potentiel économique d’un projet de valorisation d’une partie de ces coproduits, plus spécifiquement la transformation des résidus en poudre. Une analyse technico-économique a permis d’évaluer la valeur actuelle nette de ce projet à -146 676 938$, pour un projet d’une durée de 15 ans. Les principales variables influençant négativement ce résultat sont les coûts de main-d’œuvre et la faiblesse des revenus associés au projet. Des analyses de sensibilité ont été réalisées afin de vérifier le niveau de risque auquel s’exposent les transformateurs s’ils souhaitent aller de l’avant avec le projet. Afin de déterminer les variables à inclure dans ces analyses, des entrevues semi-dirigées ont été conduites avec quatre transformateurs de crabe et de homard de la Gaspésie. Celles-ci ont permis de conclure que les principales menaces perçues par les transformateurs pour l’industrie sont les fermetures de zone, les changements climatiques, les risques rattachés à l’exportation de même que le recrutement de main-d’œuvre. La variation de la valeur des variables associées à ces risques a permis de chiffrer l’impact de chacune sur la valeur actuelle nette. Seule l’augmentation du prix de vente permet l’obtention d’une valeur actuelle nette positive. Pour ce faire, celui-ci doit être 6,8 fois supérieur au prix de vente initialement anticipé. This thesis focuses on the economic potential of a project aiming to valorize part of these co-products, more explicitly the transformation of residues into powder. A techno-economic analysis made it possible to evaluate the net present value at -$146,676,938, for a 15-year project. The main variables negatively influencing this result are the labor costs and the low income associated with the project. Sensitivity tests were carried out to verify the level of risk to which processors are exposed if they wish to go ahead with the project. To determine the variables to include in these analysis, semi-structured interviews were conducted with four crab and lobster processors from the Gaspé Peninsula. These led to the conclusion that the main threats perceived by the processors for the industry are zone closures, climate change, risks associated with exporting as well as labor shortage. The variation in the value of the variables associated with these risks allowed to estimate the impact of each of these variables on the present net value of the project. Only a considerable increase in selling price allows this project to reach a positive net value. Indeed, the selling price of the final product must be 6.8 times higher than the actual selling price estimation.
