The following thesis developed a gas-phase hydroxyl radical process technology as an intervention against Salmonella Enteritidis and Campylobacter jejuni associated with shelled eggs, without negatively affecting shelf-life or hatchability. The continuous treatment is based on UV-C mediated degradation of hydrogen peroxide (H2O2) and ozone (O3), generating antimicrobial hydroxyl radicals. Trials evaluated interactions between H2O2, UV-C, and O3, in terms of pathogen reduction and egg quality metrics. An optimized treatment of 2% v/v H2O2, 20 ppm O3, and 19mJ/cm2 UV-C supported a 5.01 log10 CFU/egg reduction of S. Enteritidis and 4.87 log10 CFU/egg reduction of C. jejuni. No negative effects on egg quality (Haugh unit, yolk index, albumen pH, yolk pH) or shelf-life were observed. The optimized treatment did not negatively impact hatchability of hatching eggs. Ultimately, the research has demonstrated the potential of gas-phase hydroxyl-radicals to reduce the incidence of S. Enteritidis and C. jejuni in egg production.
