Abstract
Ce travail examine les dynamiques complexes entourant la valorisation des produits du terroir marocain — huile d’argan, safran, dattes, miel et autres produits locaux emblématiques — dans le contexte des profondes transformations des économies rurales et des politiques agricoles menées par l’État. Nous avons analysé les vulnérabilités écologiques et socio-économiques qui fragilisent ces filières. La fragmentation des chaînes de valeur, montre comment les petits producteurs restent confinés aux segments à faible valeur ajoutée, tandis que les filières les plus rémunératrices (conditionnement, export, marketing) sont de plus en plus accaparées par de grandes entreprises. Par ailleurs, nous avons analysé comment les politiques (le Plan Maroc Vert, Génération Green) n’ont pas modifié en profondeur les rapports de pouvoir asymétriques entre producteurs ruraux, intermédiaires et institutions étatiques. Les produits du terroir marocain doivent être considérés un prisme révélateur des dilemmes du développement national: entre authenticité et standardisation, entre héritage et compétitivité, entre discours d’inclusion et persistance de dépendances structurelles
