L'influence de l'environnement alimentaire local sur l'accès des ménages aux aliments sains : étude exploratoire de déserts alimentaires en territoires ruraux au Bas-Saint-Laurent

Abstract
« L'accès aux aliments sains représente un défi majeur dans les territoires ruraux dévitalisés du Québec, créant des « déserts alimentaires ». Ce phénomène, souvent étudié en milieu urbain, impacte lourdement les ménages ruraux en raison de l'éloignement géographique, du manque de commerces et des limitations associées, aggravées par la précarité économique et la faible accessibilité aux services. Pour explorer l'influence de l'environnement local sur cet accès et les stratégies d'adaptation, une recherche qualitative a été menée. Quatorze entretiens semi-dirigés avec des ménages et des intervenantes de deux municipalités rurales bas-laurentiennes ont permis de recueillir des données, analysées ensuite par une approche thématique. Les résultats révèlent une forte influence de l'environnement alimentaire local sur les pratiques alimentaires des ménages, avec les contraintes économiques et spatio-temporelles comme principaux obstacles à une alimentation saine. Pour y faire face, les ménages déploient diverses stratégies alimentaires. Du côté des actrices communautaires, leurs capacités d'action sont limitées par le manque de ressources humaines, le faible engagement communautaire et l'éloignement. To explore how the local environment influences this access and the coping strategies employed, a qualitative study was conducted. Fourteen semistructured interviews with households and community workers from two rural Bas-Saint-Laurent municipalities provided data, which was then analyzed using a thematic approach. The findings reveal a strong influence of the local food environment on household dietary practices, with economic and spatio-temporal constraints emerging as primary barriers to healthy eating. To address these, households implement various food strategies. Community workers, for their part, find their capacity for action limited by a lack of human resources, low community engagement and the remoteness of the areas they serve.
