Abstract
As -glucanas podem ser incorporadas em produtos alimentícios pré-selecionados agregando propriedades funcionais já conhecidas, como: imunomodulador, suplemento alimentar, efeitos anti-inflamatórios, melhorando a glicemia e interferentes benéficos ao sistema cardiovascular. A bibliometria é uma técnica de análise de pesquisa que estuda publicações em livros, relatórios e em artigos para quantificar, analisar e avaliar a produção acadêmica científica de temas sendo, portanto, adequada ao objetivo geral deste estudo que é identificar a disseminação do conhecimento sobre a relevância das -glucanas associadas aos alimentos funcionais. Trata-se de uma pesquisa de revisão de literatura utilizando o método bibliométrico que foi realizada utilizando banco de dados públicos PubMed e o software VosViewer. A análise das conexões e relações no tema pesquisado identificou a presença de 5 grupos (clusters) de palavras-chave que se relacionam entre si, a saber: -Glucana, estudos em humanos, alimentos funcionais, fermentação e modelo animal. Em relação à dispersão das revistas que publicaram sobre a temática observou-se que o periódico que mais publicou foi o periódico International Journal of Biological Macromolecules com 124 publicações. Apesar da importância dessa temática, ainda não se evidencia nas publicações a existência de uma rede colaborativa de pesquisas em -glucana e alimentos funcionais no Brasil. Sendo que os autores que mais publicam na temática pertencentes aos países China, Austrália, Canada e Estados Unidos. Os resultados mostraram que aplicando esse método de estudos as -glucanas, através de um software VOSviewer foi constatado que a partir da bibliometria encontra-se núcleos de coautoria, onde constatou-se que nos últimos três anos as pesquisas relacionadas às -glucanas associado aos alimentos funcionais teve um crescimento considerável, e a tendência nos próximos anos é o aumento da influência do assunto nas demais pesquisas.
