Abstract
Se realizo la caracterizacion quimica y fisica de la fibra obtenida de la cascara del frijol de soya procedente de Canada (FS1) y Brasil (FS2). Se encontro un contenido de fibra dietetica total de FS1: 67,6% y de FS2: 75,7% en bs, valores medios de contenido de inhibidores de tripsina y de actividad ureasica de 36.865,4 UIT/g y 2,03 respectivamente para FS1, y de 4.867,7 UIT/g y 1,10 respectivamente para FS2, riqueza en minerales, sobre todo en potasio, FS1: 8.580 mg/kg y FS2: 12.230 mg/kg y en hierro, FS1: 422 mg/kg y FS2: 347 mg/kg respectivamente. La capacidad de retencion de agua fue para ambos productos de 5 g de agua/g de muestra y la capacidad de retencion de grasa de FS1: 2,08 y de FS2: 1,98 g de grasa/g muestra. El valor calorico de FS 1:1,22 Cal/g y FS2: 0,80 Cal/g son tipicos de estos productos que se destinan a la elaboracion de productos hipocaloricos.
